A quick, simple breakfast to kick off the day needn’t be restricted to toast or cereal. Eggs are always your friend in the morning!
Whilst an omelette’s a great way to start the day, you can avoid any botched attempts to flip it by forgetting the pan and cooking it in the microwave.
All you need to do is decide on your filling - this can be a great way to use up some leftovers. Here, Simon opts for a simple approach with chopped ham, grated cheddar cheese and some peas for a little sweetness.
Ingredients
- 2 eggs
- 25ml milk
- Salt and pepper
- 50g grated cheddar
- 50g chopped ham
- 1 tablespoon peas
Method
- Beat the eggs and milk in a bowl and season with salt and pepper.
- Microwave for 30 seconds.
- Add the grated cheddar, chopped ham and peas and microwave for 1 further minute.
- Tuck in!
