Chickpeas are such a versatile ingredient that when blitzed together with some other simple store cupboard ingredients, they can take you on a taste journey to the Mediterranean, and the best thing about it, it will only take 5 minutes! Once you’ve made your own houmous, you will never buy it at the supermarket again. Simon Rimmer’s recipe is not only easy, it looks incredible too!
Ingredients
For the Houmous…
- 400g chickpeas (1 tin, drained and washed)
- Juice and zest of 2 lemons
- 1 garlic clove crushed
- 1 tbsp tahini
- 100ml of good quality extra virgin olive oil
To serve…
- Pitta, warmed or toasted
- Pickles
- A few non-blended chickpeas
Method
Place the chickpeas, lemon juice and zest, garlic, tahini, and olive oil in a food processor. Blitz until smooth. You may prefer your houmous smooth or chunky, just keep an eye on how long you blitz for!
Serve
Spoon your houmous into a bowl or plate and make gentle dips with the back of your spoon. Scatter your retained chickpeas over and lightly drizzle with some more olive oil. Serve with a warm pitta bread and pickles, enjoy!
