Creamed broccolini
A 100% vegetarian cream to give a touch of originality to your finger food!
To make it, trim the broccolini, steam it for 10 minutes and leave it to cool.
Place a hard-boiled egg, pickled capers, chilli pepper to taste, a handful of parsley leaves and a few pumpkin seeds in a blender.
Add the broccolini and blend for a few seconds, taking care not to overdo it (the mixture must not be too smooth and fine).
Transfer the cream to a bowl and amalgamate with extra virgin olive oil, a few drops of lemon juice and 1 tablespoon of ricotta cheese.
Perfect for serving on whole-grain toast!
Cardoon and Jerusalem artichoke soup
A creamy soup featuring the exotic flavour of Jerusalem artichoke.
To make it, clean and chop the cardoon and soak it in cold water with added lemon juice. Peel and slice the Jerusalem artichokes, then boil them in salted water with the cardoon for about 1 hour.
Heat some vegetable stock, add stale bread and simmer for 30 minutes.
Fry a clove of garlic gently with a tablespoon of extra virgin olive oil and thyme. Add the blended cardoon and Jerusalem artichoke, remove the garlic and stir for 5 minutes. To conclude, add the mixture to the saucepan containing the stock and bread and leave to simmer for another 30 minutes.
Sea-bass and artichoke strudel
A savoury reinterpretation of the famous sweet pastry, made unique by fish and seasonal vegetables!
To make it, trim the artichokes, slice them finely and soak them in cold water with added lemon juice.
Fry a clove of garlic gently in a frying-pan and cook the artichokes in it.
Skin and bone the sea-bass and cut it into two fillets.
Roll out the pastry, place the sea-bass fillets on it and cover them with the artichokes. Seal the pastry around the fish, brush it with oil and bake the savoury strudel in the oven at 200° for about 15 minutes.
