Light dishes for Christmas? It is no joke: light dishes can be made without sacrificing the taste that traditionally distinguishes Christmas lunches and dinners, taking advantage of vegetables’ incredible properties to create a healthy and delicious menu.
Here are some recipes directly chosen by Hoover for a Christmas of well-being and 100% vegetable flavours!
Mushroom and pine nut quiche
A delicious appetizer that combines the earthy taste of mushrooms with the creaminess of cheese and crunchiness of pine nuts. To make it, first brown the mushrooms in a pan with butter and onion. Separately, beat the eggs, the quark and the semolina, creating a smooth dough. Add the mushrooms to the mixture, pour everything into muffin moulds and cook for about 40 minutes in a preheated oven at 180 °C. Cool and decorate with pine nuts.
Sweet potatoes with walnuts
A side dish that will surprise you with its pleasantly sweet taste. It is very simple to make: cook the sweet potatoes in salted water for about 20 minutes until soft. Peel them, cut them into circular slices and arrange them in layers in a buttered pan. Separately, make an emulsion of orange juice and maple syrup, adjusting it with salt and pepper. Pour it on the pan together with the crumbled walnuts and bake at 200 °C (180 °C if ventilated).
Stuffed cabbage
To make this Savoy cabbage-based recipe, blanch the cabbage in salted water for a few minutes, drain and gently open the leaves. Next, make the filling: boil the potatoes and mash them with a fork; add them to the eggs, grated cheese, salt, pepper and nutmeg. Place the filling in the centre of the cabbage and distribute the rest between the leaves. Tie the stuffed cabbage with kitchen string and bake it for about 25 minutes at 180 °C.
